Indian Table – Shopping & Equipment List
We are so excited to host you in our upcoming class! One week before class we will email everyone the complete shopping list and then a few days before class we will email the detailed recipe packet and a Zoom link. Until then, below is a list of ingredients and equipment that you’ll need.
On the menu:
Mixed greens saag-paneer
Winter vegetable pulao with ghee-roasted spices
Spiced yogurt raita
Shopping List:
Produce:
fresh dill
radish greens or 8-10 leaves mustard greens
red onions
ginger root
Roma tomatoes
carrot
cilantro (optional)
frozen peas
frozen spinach (or fresh spinach)
Dairy:
heavy cream
plain whole milk yoghurt
Dry Goods / Pantry:
high heat oil, like safflower
garlic paste (or equal parts crushed garlic)
sugar
ghee, unsalted butter, or oil
white basmati rice (or any long-grain white rice)
Indian black salt (or fine sea salt)
red chili peppers (like Indian chili peppers or arbol)
kosher salt
Protein:
paneer (can substitute with firm tofu)
Spices:
aamchur (dried mango powder) (or a splash of lime juice)
Indian red chili powder
kasoori methi (dried fenugreek leaves), optional
cumin seeds (preferably Shah Jeera/Kala Jeera
cardamom pods
cinnamon stick
cinnamon powder
bay leaves
turmeric powder
cumin powder
coriander powder
cloves
black peppercorns
Equipment List:
Chef’s knife
Cutting board
Mixing bowl
Fork or whisk
Rubber spatula
1 large pot to wilt the greens
1 thick bottomed saucepan with a lid for the Saag-Paneer
Flat spatula (2)
Blender or stick/immersion blender
1 thick bottomed pot (preferably with a wide mouth) with lid like a Dutch oven for the Pulao
