On the menu:
Hainanese Chicken and Rice
Ginger scallion sauce, soy sauce dressing, and chili sauce

Shopping List:
Produce:
fresh ginger
scallions
garlic
Persian cucumbers
shallots
tomato
cilantro
pandan leaves
fresh Thai chilies
lime

Dry Goods / Pantry:
toasted sesame oil
MSG, optional, but recommended
vegetable oil
peanut oil, preferably or vegetable oil
jasmine rice
light soy sauce
sugar
rice vinegar (or white vinegar)
salt

Protein:
whole chicken

Equipment List:
Cutting board and knife
1 small sauce pot
1 large stock pot
1 medium pot with lid for rice or rice cooker
2 meat hooks or large colander
Mortar and pestle, food processor, or blender
Small mesh strainer
Ladle
Liquid measuring cup
Large slotted spoon or sturdy tongs
1 large bowl or container to fit a whole chicken, filled with ice water and 1/2 cup kosher salt
Meat hooks for best results (Kitchen twine can work too)
