We are so excited to host you in our upcoming class! One week before class we will email everyone the complete shopping list and then a few days before class we will email the detailed recipe packet and a Zoom link. Until then, below is a list of ingredients and equipment that you’ll need.

On the menu:
Gumbo Ya Ya
Fluffy Rice
Cheesy Garlic Bread

Shopping List:

green bell pepper
yellow onion

parmesan cheese (Grana Padano is a good substitute)
unsalted butter

Dry Goods / Pantry:
neutral high heat oil (like safflower, or a neutral vegetable oil)
all-purpose flour
chicken stock
Louisiana-style hot sauce for serving with the gumbo (Tabasco, Louisiana Gold, Crystal…) (optional)
long-grain white rice
baguette or loaf crusty bread (like a French or Italian loaf)

bone-in skin-on chicken thighs
Cajun andouille sausage (or other smoked sausage like kielbasa)

kosher salt
freshly ground black pepper
filé powder (optional)
cayenne pepper
garlic powder (or garlic granules)
sweet paprika
dried oregano
dried thyme
bay leaves

Chef’s knife
Cutting board
Measuring cups and spoons
Garlic press (optional)

For the gumbo:
Oven-safe baker or metal pan with sides large enough to hold all of the chicken
5-6 quart stock pot or dutch oven (stainless steel or light color on the inside)
Wooden spoon or spatula for the roux
Whisk (optional)

For the rice:
Medium saucepan with lid for cooking rice
Fork for rice

For the garlic bread:
Baking sheet for the garlic bread
Serrated knife
Cheese grater
Pastry brush (optional, but really useful for the garlic bread)
