We are so excited to host you in our upcoming class! One week before class we will email everyone the complete shopping list and then a few days before class we will email the detailed recipe packet and a Zoom link. Until then, below is a list of ingredients and equipment that you’ll need.

On the menu:
Gaeng Keow Wan Gai (green curry with chicken, green chili, Thai basil, lychee, and eggplant)
Khao dok anchan (butterfly pea flower blue rice)
Kai tom (boiled egg)

Shopping List:
We are lucky that we can find most of the ingredients in Seattle at Asian markets, at your neighborhood store or online. When I am in Seattle, I often go to Mekong Market on Rainier Ave – I find most of the ingredients I need there (and it feels a bit like home). Below I also try to provide some options or substitute items. I hope you will enjoy this and cook more Thai food at home!

Produce:
makrut lime leaves
Thai eggplants or Asian eggplant
Fresno peppers
Thai basil (for 1 cup + 10 each leaves)
jalapeno
green Thai chilis
lemongrass
galangal
makrut lime (looks like lime but with bumpy skin) or substitute with lime
cilantro roots or cilantro
garlic
shallots

Dry Goods / Pantry:
jasmine rice
dried butterfly pea flower (available at Mekong Market or online)
kosher salt
fish sauce
shrimp paste (optional, but recommended)
palm sugar or brown sugar
coconut milk
vegetable oil or coconut oil
chicken stock
lychee fruits (Lychee in syrup) comes in a can. There are about 16 fruits in one 20oz. can. I use the AROY-D brand, but any brand will do. (Or substitute with 1 cup fresh grapes)

Proteins:
boneless, skinless chicken thighs
4 eggs

Spices:
coriander seeds
cumin seeds
white or black peppercorn
ground turmeric

Equipment list:
2 medium pots with lids for the rice and curry (if using rice cooker, you will need only 1 pot)
1 small or medium pot for cooking the eggs
Stone mortar and pestle (a good size to make curry paste about 8 inches diameter) or an immersion blender or small food processor (I will use mortar and pestle and the immersion blender in the class)
Coffee or spice grinder (or mortar and pestle)
Ladle
Spatula
Small mixing bowl
Medium mixing bowl
A small heat-proof jar or bowl to make Butterfly pea flower extract
Small colander
Cutting board and knife
Measuring cups and spoons
