On today’s menu:
Almond Macarons
Blackberry Mascarpone Filling
Chocolate Cardamom Ganache

Wine suggestion: Prosecco. This light and fruity Italian sparkler will be a lovely contrast to these decadent treats.

Non-alcoholic drink suggestion: Berry kombucha.

Shopping List:
Produce:
– 1/2 cup blackberries

Dairy:
– 4 large eggs
– 4 ounces (1 stick) unsalted butter
– 4 ounces cream cheese
– 4 ounces mascarpone
– 4 ounces heavy cream

Dry Goods / Pantry:
– 1 1/4 cups blanched almond meal
– 2 1/4 cups powdered sugar
– 1/4 teaspoon kosher salt
– 1/2 cup granulated sugar
– 2-3 drops gel food coloring – purple or color of choice (optional)
– 1 1/4 cups powdered sugar
– 3 ounces 40% or milk chocolate
– 4 ounces 70% or dark chocolate
– 3 tablespoons light corn syrup

Spices:
– 2 green cardamom pods

Equipment List:
– Stand mixer or hand mixer
– Food processor or blender
– Spatula
– Mesh strainer/sifter
– 2 sheet pans
– 2 sheets of parchment paper
– Macaron template (We will send this to you two days in advance of class. Please print it out.)
– Piping bag
– Round piping tip (like the Ateco #803 or equivalent)
– Saucepan
– 2 small mixing bowls
– Whisk (optional)
