Egg Pasta Dough
Sweet Corn and Ricotta Filling
Cherry Tomato and Sweet Onion Sauce

Shopping List:
sweet corn
cherry tomatoes
sweet onion
fresno chili (optional)
Italian parsley

whole milk ricotta
parmesan cheese
butter (optional)

Dry Goods / Pantry:
semolina flour
00 or all-purpose flour
dry white wine, like sauvignon blanc or pinot grigio
olive oil

Kosher salt
freshly ground black pepper
red pepper flakes

Equipment List:
pasta roller, KitchenAid pasta attachment, or rolling pin
immersion blender or food processor
cheesecloth lined mesh strainer or plate lined with paper towels
pastry bag or zip closed baggy
large pot for cooking pasta
saute pan for cherry tomato sauce
large mixing bowl for sweet corn and ricotta filling
medium mixing bowl for flour
small mixing bowl for eggs
cutting board and knife
bench scraper
clean work surface for mixing pasta dough
