We are so excited to host you in our upcoming class! One week before class we will email everyone the complete shopping list and then a few days before class we will email the detailed recipe packet and a Zoom link. Until then, below is a list of ingredients and equipment that you’ll need.

On the menu:
Red Cabbage Sauerkraut with Coriander and Caraway
Golden Sauerkraut made with Carrot, Turmeric, and Ginger
Napa Cabbage Scallion Kimchi
Fennel Rhubarb Kimchi

Shopping List:

red cabbage
Napa cabbage
rhubarb (can substitute celery stalks if you prefer the taste or they are easier to find)
red or sweet onion
yellow onion
tart apple, like Granny Smith
Asian pear
fresh ginger
habanero pepper (optional)

whole coriander seeds
whole black peppercorns
whole caraway seeds
turmeric powder
whole fennel seeds

Dry Goods / Pantry:
sea salt
flake sea salt
kosher salt
Gochugaru Korean chili flakes
Korean anchovy sauce (or other fish sauce of your choice)
Korean sand lance sauce (or other fish sauce of your choice)
salted shrimp

Equipment List:
A kettle (or pot) to boil water
Kitchen scale
Sharp knife and cutting board
Mandoline (optional)
Box grater or food processor with a grater attachment
3 large mixing bowls (ceramic or glass recommended)
Jars to ferment your kimchi and kraut (Recommended: 4 quart-sized mason jars with an extra pint or quart jar or two in case you have extra sauerkraut or kimchi. Note: 4 quart-sized mason jars will be included if you purchase an ingredients kit)
Clean lids and rust-free rings for your jars
Jar weights (can be smaller mason jars, boiled rocks, etc)
Parchment or wax paper (optional)
