We are so excited to host you in our upcoming class! One week before class we will email everyone the complete shopping list and then a few days before class we will email the detailed recipe packet and a Zoom link. Until then, below is a list of ingredients and equipment that you’ll need.

On the menu:
Citrus brined roasted chicken with spring herbs, garlic, charred onions, and homemade butter
Buttermilk mashed parsnips with black pepper and thyme
Quick pickled radish and cucumbers
Spring green salad with a tarragon vinaigrette

Shopping List:

Produce:
lemons or oranges
thyme
tarragon
sage (or other herb of your choice)
garlic
yellow or sweet onion
parsnips (or other root vegetable of your choice)
baby radishes (French breakfast variety if you can find them!)
Persian or English cucumber
shallot
Spring salad greens (recommended combinations: watercress, arugula, butter lettuce, endive, or frisée)

Dairy:
heavy cream (ideally from a local dairy)
milk

Dry Goods / Pantry:
kosher salt
sugar
crusty sourdough (optional if gluten free)
safflower oil, or any high heat neutral oil
extra-virgin olive oil
white wine, champagne, or rice wine vinegar (or combo)
Dijon mustard

Protein:
chicken, air chilled if possible

Spices:
black peppercorns
whole coriander
yellow mustard seed
bay leaves (fresh or dried)

Equipment List:
Container with tight lid to brine your bird in the fridge overnight
**We love using a 4 or 6-quart cambro and lid! Which can be commonly found at restaurant supply or kitchen stores online. (Or if you are in Ballard or other Seattle areas it can be easily picked up at Smart Foodservice – you don’t need to be a restaurant to shop there!)
