Homemade “Khubez”” Pita Bread

Tarator sauce (Tahini, lemon and garlic sauce)

dry active yeast

dried chickpeas

vegetable oil
toasted sesame seeds (optional)

Spices:
ground cumin
ground coriander
allspice
black pepper
red pepper flakes or Aleppo pepper

ground cloves

Equipment list:
Cutting board
Chef’s knife
Paring knife
Stand mixer with dough hook – encouraged but optional
Rolling pin
Tongs, if available
Food processor for both falafel and the tatbeeleh
Strainer for the falafel
Spatula
Whisk
Slotted spoon, if available
Baking sheet for the divided dough
3-4 clean kitchen towels for the dough and bread
Basket or bowl lined with a kitchen towel for the bread
A cup for the yeast mixture
1 salad bowl
1 small mixing bowl for the dressing
1 large mixing bowl for the falafel
2 small serving bowls for the tarator and tatbeeleh sauces
Cast iron or nonstick skillet for baking the bread
Deep casserole, pot, or a wok for frying the falafel
Optional: a mortar and pestle for the tatbeeleh
Optional: a blender for the tarator
