On the menu:
Homemade English muffins
Perfect poached eggs
Spring herb hollandaise
Crispy pancetta, charred asparagus, and smoky roasted tomatoes

Produce:
asparagus
fresh tarragon
fresh dill
fresh parsley
lemon
Roma tomatoes

Dairy:
unsalted butter
whole milk

Dry Goods / Pantry:
all-purpose flour,
instant yeast (or substitute with active dry yeast – see note in packet for adjusting)
kosher salt
lapsang souchong tea (or substitute with smoked salt)
extra virgin olive oil
white wine vinegar

Proteins:
eggs
thin sliced pancetta

Spices:
cayenne
freshly ground black pepper, optional

Large saute pan (nonstick) with lid and cast iron, carbon steel or heavy bottom saute pan
