On the menu:
Coq au vin (whole chicken braised with red wine, bacon, and mushrooms)
Green salad with a warm bacon fat vinaigrette

Produce:
pearl onions

escarole or any favorite sturdy green, such as dandelion, treviso, radicchio or a mix of all!

unsalted butter

Dry Goods / Pantry:
all-purpose flour

red wine
chicken stock
safflower oil
extra virgin olive oil

bacon, sliced
cut fryer chicken (2 skin-on, bone-in chicken breasts, 2 skin-on & bone-in hindquarters)
