On the menu:
Arroz Caldo
Cheater’s Confit Chicken Legs
Crispy Fried Shallots
Wilted Greens with Kumquat Relish

Shopping List:
yellow onions
Thai chiles (optional)
green onions
kumquats (or a small orange and a lime)
jalapeno or Fresno chile
Swiss chard

Dry Goods / Pantry:
high heat cooking oil, such as safflower
jasmine rice
white glutinous rice
chicken stock, preferably homemade
coconut milk
apple cider vinegar

chicken hindquarters

Kosher salt
Freshly ground black pepper

Equipment List:
Cutting board
Sharp chef’s knife
Large Dutch oven or similar vessel with a lid
Slotted spoon
Wooden spoon
Plate for arroz caldo garnishes
Large saute pan (one that can hold 4 chicken legs)
Pair of tongs
Medium saucepan/pot for shallots
Small pot or pan for kumquat relish
