We are so excited to host you in our upcoming class! One week before class we will email everyone the complete shopping list and then a few days before class we will email the detailed recipe packet and a Zoom link. Until then, below is a list of ingredients and equipment that you’ll need.

On the menu:
Chicken Parmesan
Zippy Kale Caesar Salad

Shopping List:

Produce:
kale, lacinato is best
fennel
onion
garlic
lemon
parsley, basil, oregano, or thyme

Dairy:
fresh mozzarella
Parmesan or Grana Padano (most will be shredded, some will be sliced into ribbons for salad)
eggs

Dry Goods / Pantry:
olive oil
neutral oil like safflower
tomato paste
can of your favorite tomatoes
red wine
all-purpose flour
panko breadcrumbs for ideal crunch. Other bread crumbs will also work.
loaf crusty bread for croutons like Grand Central Piccolo Como loaf
anchovy fillets in oil
dijon mustard
Worcestershire
pickled chilies from a jar like Calabrian chilies or Mama Lil’s

Protein:
boneless skinless chicken thighs or 4 boneless skinless chicken breasts

Spices:
chili flakes
Freshly ground black pepper
Kosher salt (we use Diamond Crystal brand)

Equipment List:
Kitchen mallet or rolling pin to pound chicken
Plastic wrap or parchment paper for pounding chicken
Heavy bottomed shallow pan or pot for frying chicken
Large pan or pot for making tomato sauce
Large baking dish like 9×13 Pyrex
Parchment lined baking tray
Large mixing bowl
3 shallow dishes for breading chicken
Mortar and pestle, small food processor, or blender
Chef’s knife
Cutting board
Utensils like wooden spoons, tongs, fish spatula, etc
Mandoline (optional)
