On the menu:
Bun Ga Nuong with Nuoc Cham (Lemongrass Chicken with Vermicelli Noodles)
Goi Cuon Chay (Vegetarian Fresh Roll with Peanut Sauce)

Shopping List:

Thai chili
green leaf lettuce
Persian cucumber
mung bean sprouts
fresh cilantro
fresh mint

Dry Goods / Pantry:
canola oil or other neutral flavored oil
fish sauce (such as Three Crabs)
soy sauce
unsalted roasted peanuts
uncooked rice vermicelli noodles
rice paper
rice vinegar
hoisin sauce
creamy peanut butter, preferably Skippy brand
Sambal chili sauce

boneless, skinless chicken thighs
fried tofu

Equipment List:

Knife and cutting board
Small pot or pan
large pot to cook noodles
Grill pan or oven safe saute pan for chicken
Food processor or blender
1 medium bowl for marinade
2 Small mixing bowl
Shallow bowl
4 large serving bowls
4 dipping bowls for sauce
4 pairs of chopsticks or forks
