On the menu:

“Gin and Tonic” Cured Salmon
Pickled Red Onion and Cucumber
Herbed Creme Fraiche
Horseradish and Preserved Lemon Cream
Pickled Beets, Fried Capers, Smoked Trout, Salmon Eggs

Produce:

horseradish (or substitute with horseradish cream sold in a jar)

Dairy:
whole milk

Dry Goods / Pantry:
active dry yeast

all-purpose flour
high heat vegetable oil
red wine vinegar

preserved lemon rind (or substitute with lemon zest)

Proteins:
smoked trout
salmon eggs (ikura)
frozen or previously frozen salmon fillet (center cut, not the tail section) – you can use sockeye or coho, but do not use fresh salmon for this preparation!
nova lox (cold smoked salmon) or gravlax – quick note: we are making cured salmon in class, but it won’t be ready for 3 days! So, I’ve included this lox so that you can enjoy our blini during class!

black peppercorns, plus more to taste
juniper berries
