We are so excited to host you in our upcoming class! One week before class we will email everyone the complete shopping list and then a few days before class we will email the detailed recipe packet and a Zoom link. Until then, below is a list of ingredients and equipment that you’ll need.

On the menu:
Chaar masalah – Traditional Afghan spice mixture
Samaroq – Mixed mushroom curry
Challaw – Seasoned Afghan rice

 

Shopping List:

Produce:
– 1 large red onion
– 4 cloves garlic
– 2 large tomatoes
– 1 pound mushrooms (crimini, button, oyster, etc)
– 2 curry leaves (optional)

Dry Goods / Pantry:
– 2 cups white basmati rice
– 3/4 cup neutral oil (safflower, sunflower)
– 2 1/2 tablespoons fine sea salt

Spices:
– 2 cinnamon sticks
– 4 dried bay leaves
– 4 brown cardamom pods
– 4 teaspoons green cardamom pods
– 4 teaspoons cumin seeds
– 1 tablespoon coriander seeds
– 1 teaspoon cloves

Equipment List:
– Cutting board
– Knife
– 1 large pot (for rice)
– Metal sieve or colander (for rice)
– 1 large pot (for mushroom curry)
– 1 small frying pan (for toasting spices)
– Mortar and pestle
