We are so excited to host you in our upcoming class! One week before class we will email everyone the complete shopping list and then a few days before class we will email the detailed recipe packet and a Zoom link. Until then, below is a list of ingredients and equipment that you’ll need.

On the menu:
Oxtail Kare Kare with long beans, baby bok choy, eggplant, crushed peanuts, cilantro and chile
Ginisang bagoong (sauteed shrimp paste)
Steamed rice

Shopping List:

yellow onion
small eggplants, (such as Chinese, Japanese, or Filipino)
long beans or green beans
baby bok choy
fresno chiles (or any chile you prefer)
jalapeno or serrano chile (or any chile you prefer)

Dry Goods / Pantry:
annatto seeds
neutral oil, such as safflower
beef stock
peanut butter (smooth or crunchy is fine)
fish sauce
roasted salted peanuts
bagoong alamang
brown sugar
apple cider vinegar
short grain rice


Kosher salt
Freshly ground black pepper

Equipment List:

Sharp chef’s knife
Cutting board
Bowl for soaking the annatto seed
Large, heavy pot with a well fitting lid, such as a Dutch oven
Wooden spoon or silicone spatula
Large pot for blanching vegetables
Spider or slotted spoon
Large bowl for vegetables
Mesh strainer
medium saute pan
4 quart pot with lid for cooking rice
