If you’ve ever wanted to take your wine-pairing expertise beyond basic rules of thumb, this is your chance. Wine Food authors Dana Frank and Andrea Slonecker will introduce you to the concepts underlying the art of pairing wines with food. You’ll explore dimensions like acidity, spice, funkiness, richness, and providence, helping you decide when it’s appropriate to use complementary flavors or contrasting ones. On the menu: Riesling with sweet-sour-salty citrus salad; Oloroso Sherry with caramelized onion and bread soup with brûléed blue cheese; Georgian Orange wine with khinkali (beef-filled Georgian dumplings); and Oregon Pinot noir and Gamay blend with pimento cheese soufflés.
