Bread is central to meals across the Middle East and Mediterranean, but it has special significance in Turkey, where a dizzying array of shapes and flavors show up in the markets and food stalls. In this class Arianna Garella will teach you about the rich history of Turkish bread, how to work with yeasted doughs, and how to mimic a wood oven at home.You'll make grilled gözleme flatbreads with roasted spinach and grilled halloumi; two types of yeasted pide, a nectarine, feta, and mint version as well as cumin-spiced lamb and tomato; and twisted sesame simit bread with abagannuc (Turkish-style eggplant dip).
