He’ll show you how to grind corn into fresh masa, and then how to make tortillas and tostadas. You’ll learn how to shop for and chop the freshest fish, how to make quick pickles, and how to dry herbs for infused salt as you make heirloom tomato tostada with smoked queso Oaxaca and epazote salt; chicken tinga tostada with lettuce, pickled peppers, crema, and cotija; rockfish ceviche with cilantro, onion, tomato, and lime; and shrimp ceviche, with charred corn, summer squash, and cucumber aguachile.
