Jay Guerrero’s love of French cooking runs deep, particularly the rustic dishes prepared throughout the southern region of Provence. In this class he’ll show you how to make two kinds of bouillabaisse: a classic-style bouillabaisse with mussels, rockfish, seabass, and shrimp, served with bread and rouille; and bourride, a style of bouillabaisse made with cod and lemon aioli; You’ll round out the meal with panisses (chickpea fries) with rosemary salt and whipped chevre; and a haricot verts salad with eggs and olive oil anchovy dressing.
