Fried oyster po’ boys are up there with cajun cooking as great Louisiana culinary exports, and in this class Laura Pyles will teach you to make them from scratch. You’ll start by making your own homemade po’ boy rolls as part of a cornmeal fried oyster po’ boy with creole slaw and remoulade; plus a variation, the fall-apart roast beef po’ boy with debris gravy and onion straws; as well as Louisiana-style hot sauce,  a delicious veggie gumbo, and some techniques for dough making, frying, and roux.
