Bring the sweet smells of fresh pan dulce from the streets of Mexico City into your home kitchen with Mariela Camacho, owner and baker of Comadre Panaderia. Mariela will teach you about the history and importance of pan dulce and panaderias in latin culture, while making a variety of pastries from brioche dough and bizcocho (traditional Mexican sweet bread dough). You’ll learn the techniques of shaping, proofing, and working with enriched dough as you bake chocolate concha, red fruits concha, chorreada pan dulce (sweet rolls with poncillo), and canela rolls with dulce de leche and cream cheese frosting. And since no trip to the bakery is complete without a cookie, you’ll also learn how to make classic alfajores (butter cookies filled with cajeta).
