You'll learn about the history of the region as she shows you how to get the perfect puff on your homemade pita, and how to achieve flavorful, crispy, falafel every time. Also on the menu is sabich, a lesser known, but incredibly delicious pita sandwich stuffed with fried eggplant, 7-hour eggs, and tahini. You'll top your sandwiches with a variety of condiments from hummus to tarator sauce, as well as amba (a condiment made from spicy green mango), pickled jalapeños and cauliflower, and tomato cucumber salad.
