Its spicy flavors, sour unleavened bread, vegetable-centered plates, and lack of utensils make for a unique and flavorful experience like no other. In this class Meeraf Mamo will teach you how to cook classic Ethiopian dishes at home, with or without forks. On the menu: homemade injera (sourdough flatbread); nitir kibeh (herb-infused ghee); kai siga wat (spicy slow-cooked beef with caramelized onion); shiro (spiced ground chickpea stew); fosolia (fried green beans, carrots, and garlic); tikil gomen (braised cabbage with ginger); and kochkocha (cilantro jalapeno sauce).
