In this class Eric Teachout will teach us about the classic techniques that define this region, along with fresh ideas for the contemporary home cook. You’ll make duck ‘carnitas’ enchiladas with roasted poblano salsa verde and freshly-pressed corn tortillas; Southwest-style shrimp and grits with honey, queso asadero, and lime crema; pinto bean succotash with golden beets, kale, grilled corn, and charred tomato; and tres leches cake with lime curd and chili oat crumble.
