While the Basque language is like nothing else in Europe, the cuisine in this cozy corner of the continent is a happy marriage of both its Spanish and French neighbors. In this class Laura Pyles will teach you about the flavors and history of the Basque region while teaching you how to cook up some classic dishes at home. On the menu: gildas (anchovy, green olive and pepper skewers); fried goat cheese with honey; cod a la vizcaina (cod poached in olive oil, peppers, and garlic sauce); braised beans with savoy cabbage and chorizo; and pantxineta (puff pastry tart made with vanilla custard and almonds).
