With its vibrant mix of herbs and spices, it’s no wonder that Thai food has so many fans. And their most popular dish, curry, comes in an array of colors and flavors, with each representing the region where it is made. In this class Srisuda Dougherty will teach you how to pound your own curry paste into three curries that are the foundation of many curries across Thailand. You will start by making kaeng pa (jungle curry soup with pork), that uses a pounded rice powder. Next you’ll make kaeng daeng (red curry with vegetables), which uses coconut milk, dried chili, lemongrass, galangal, and kaffir lime. Lastly, you’ll make kaeng keeo wan (green curry with chicken), using fresh green chili, cilantro, turmeric, bamboo shoots, and eggplant. You’ll enjoy all three curries with warm jasmine rice.
