He’ll teach you the difference between wood, charcoal, and gas grilling, and how to build and maintain a fire as you make dry-brined & grilled spatchcock chicken with pepper and chile puree; lamb burger with spicy whipped feta, pickled onions, tomatoes, and arugula; spicy pork ribs with a sesame, ginger, and hoisin sauce; and blackened asparagus with citrus dressing and brown butter breadcrumbs.
