Summer is coming and with it (hopefully), some sunny weather. And when it’s finally too warm to fire up the oven, there are few things better than a cool and colorful salad. In this class you’ll work on those knife skills with Kim Cozzetto Maynard while learning all about the different styles of salads and dressings, as well as tips for crafting your own perfect salad recipe. You’ll make grilled zucchini and lemon with green beans, basil, feta, and pistachio-lime vinaigrette; grilled stone fruit and bread with fennel, spicy greens, ricotta, and preserved lemon vinaigrette; romaine wedges with cherry tomatoes, white beans, pickled sweet onions, and avocado-scallion dressing; and new potatoes with sugar snaps, radishes, tarragon, capers, and creamy mustard dressing.
