You’ll learn how to cure fish, how to shuck oysters and clean and purge mussels, and how to debone fish as you make gin-and-tonic-cured albacore with dandelion crackers and lime cream; steamed lingcod with sizzling chile-ginger oil and greens; raw oysters with lime granita and candied jalapeno; and seafood bouillabaisse with rouille and garlic toast.
