You’ll learn how to humanely kill and clean crab, how to clean and purge clams, and how to skin and debone fish as you make beet-cured gravlax with scallion creme fraiche, pickled shallots and rye crumbs; cracked Dungeness crab with lemon horseradish butter; steamed Manila clams with marsala, beluga lentils, and nduja; and seared black cod with sunchokes, sauce verte, and meyer lemon.
