He’ll introduce you to spices from around the world, and teach you how to source them, store them, and grind them. You’ll learn how to make your own spice blends and rubs, and how to infuse foods with your favorite flavors as you make Vindaloo paneer with cashew tomato cream; Caribbean-spiced chicken with sweet plantain with greens; Moroccan-spiced chickpea, squash, and sweet potato stew; roasted spring vegetables with dukkah and black cardamom yogurt; and sauteed green beans with Sichuan peppercorns.
