In this class Becky Selengut will teach you some of her favorite mushroom recipes from her mushroom-focused book, Shroom. You’ll learn all about the different mushroom varieties and growing seasons, as well as methods for cleaning mushrooms, and rehydrating dried mushrooms. You’ll make Dan Dan noodles with shiitakes, pork, pickled mustard greens and chile oil; smoky squash soup with black trumpet mushrooms and scotch; chanterelle, bacon and basil with sweet corn sauce; and king trumpet and porcini mushroom salad with pine nuts and lemon salt.
