Mezze (small plates) pop up all across the Mediterranean, and they extend beyond the standard hummus and tabbouleh served at most restaurants. In this class, Kim C. Maynard will show you how to transform local ingredients into contemporary versions of mezze that can be served as appetizers or as the centerpiece of a Mediterranean-style feast. You’ll make caramelized eggplant salad with sweet and spicy peppers, coriander, and sumac; kibbeh (fried bulgur shells) stuffed with butter beans, chard, pine nuts, and raisins with tahini dipping sauce; parsley and mint salad with tomatoes and bell peppers, cucumber, freekeh, and pomegranate molasses; whipped feta and yogurt with pistachios and fresh herbs; fried brik pastries stuffed with potato, black olives, parsley, harissa, and a runny egg.
