You’ll learn to make creamy fava bean and homemade ricotta dip with spring vegetables and charred fava bean shoots; spring nettle colcannon with new potatoes, cabbage and brown butter; artichoke halves a la plancha with preserved lemon butter and chiles with saffron breadcrumbs; and pan-roasted fiddleheads with asparagus, shiitake bacon, goat cheese and spring herb fonduta.
