Soup is a universal staple, and Mexico proves that you don’t have to have the coldest weather to make lovely bowls of pure comfort. In this class Neil Duncanson will teach you how to make basic stocks, and how to add layers of flavor with traditional Mexican techniques and ingredients. On the menu: posole verde with heirloom hominy, quick-pickled tomatillos, and cabbage; chicken tortilla soup with Manchego espuma (mousse) and radish slaw; and lamb birria with habanero salsa and homemade corn tortillas.
