In this class, Layna Vaughn will explore the fundamentals of eggs in all their various savory and sweet forms. From boiled eggs to perfect poached eggs, homemade mayonnaise and aioli, hollandaise, cream anglaise, and meringue – it's a whole night built on the humble egg. On the menu: eggs Benedict with hollandaise, asparagus, morels, and chive blossoms; spring vegetables with garlic aioli, spicy aioli, and tarragon aioli; and ile flottante (poached meringue with vanilla creme anglaise, rhubarb compote, and pistachio praline).
