Abby Canfield will teach you the fresh pasta basics: dough preparation and kneading, rolling and shaping, and drying for storage. You’ll make a variety of pasta shapes to complement your summer feasts. On the menu: pappardelle with smoked apricots, sweet onion, and shishito peppers; cavatelli di grano arso with sweet corn cream and roasted tomatoes; lasagnette with grilled eggplant, homemade ricotta, roasted red pepper sauce, and olive salsa verde; and zucchini noodles with preserved lemon, pickled chilies, and ricotta salata.
