You’ll learn about earth-friendly aquaculture techniques as you make sardines with drunken currants and caramelized onions on toast; roasted salmon with scallions, charred lemon and Thai basil butter; poached lingcod with sizzling chile-ginger oil and spring greens; and seafood bouillabaisse with rouille and garlic toast.
