In this class Jennifer Altman will teach the history and the proper technique for her favorite classic French pastries as you make tarte flambee (Alsatian bacon and onion tart); canelés de Bordeaux (rum and vanilla-flavored pastries with custardy centers and a caramelized crust); vanilla, chocolate, and almond financiers; and gâteau Basque with cherry preserves.
