Join us for the latest installment in our Exploring Italy series, where we’ll take a tour of the different regions in this food-obsessed country. This season Marie Rutherford will take us to the Umbria region, where she’ll teach us about the local flavors, techniques, and traditions. You’ll make torn pasta with chickpeas and beans in broth; pork ragout; lentils with olive oil-braised fennel; and chestnuts with mascarpone and ricotta.
