Exploring Italy: Puglia

Join us for this installment in our Exploring Italy series, where we take a tour of the different regions in this food-obsessed country. You’ll make the most of late summer produce with Arianna Garella as you dip down south to the the 'heel' of Italy and explore Puglia. On the menu: marinated grilled eggplant and tomatoes with basil on charred country bread; calamari stuffed with breadcrumbs, capers, and parsley; and homemade orecchiette pasta with broccoli rabe, lemon, and burrata. For dessert we'll combine some of the region’s best known ingredients by making fichi al forno – red wine-roasted figs with almond crumble.
