Exploring Italy: Lazio

Join us for the latest installment in our new series, Exploring Italy, where we’ll take a tour of the different regions in this food-obsessed country. This spring Kim Cozzetto Maynard will take us to the Lazio region, home of the Roman empire, where she’ll teach us about the local flavors, techniques, and traditions. You’ll make carciofi alla giudia (fried baby artichokes); handmade semolina spaghetti alla gricia (pasta with guanciale, black pepper, and pecorino cheese), coda alla vaccinara (oxtail braised with tomatoes, raisins, and chocolate), arugula salad with fava, pecorino, and pine nuts; and affogato al caffe (zabaglione gelato drenched in espresso).
