With some of the highest number of restaurants per capita, it’s no wonder that Lyon is the center of French cuisine. In this class Jay Guerrero will take you on a tour of this region, learning about traditions and techniques, while cooking some Lyonnaise dishes. On the menu: cervelle de canut (sheep milk cheese spread) with toasted baguette, herbs, and shallot; quenelles with sauce nantua (seafood mousse with crayfish bechamel); poulet au vinaigre (vinegar-braised chicken with tarragon and creme fraiche); and winter squash gratin with apples, leeks, comté, and herbed breadcrumbs.
