Join Jay Guerrero for an evening of all things duck. In this class you’ll learn how to break down a whole duck, the best way to render duck fat, how to make duck confit, and how to properly cook a duck breast. On the menu: duck tartare with salt cured duck egg yolk and truffle salt; duck rillettes with cherry preserves and grilled bread; smoked duck breast salad with dandelion greens and duck fat vinaigrette; and duck eggs en cocotte with chanterelles, gruyere, and duck fat fried potatoes.
