Confused by the vast array of sauce options? Feeling ready to take your sauce-making skills up a level? Then this class is for you! By the time Marie Rutherford is through, you’ll be ready to make modern and classical sauces, as well as start creating your own! You’ll learn basic skills that form the backbone of sauce making: caramelizing sugars, deglazing with acid, building hot and cold emulsions, working with green sauces, and learning how to balance your finished creations. You’ll make roasted apricot agrodolce that you’ll enjoy with blistered peppers and little potatoes; green harissa that you’ll slather on roasted chicken wings; and ginger and lemon verbena pouring custard that you’ll drizzle over fresh fruit or spin into ice cream.
This is a live, hands-on cooking class held in your kitchen via Zoom. Class is meant to be as interactive as it would be at our table, with the instructor teaching you how to prepare each recipe. Each class ticket is for one kitchen, and we welcome group cooking on the same screen. All recipes are designed for four servings.
Two days before class we will email everyone the detailed recipe packet and a Zoom link. All classes are listed in Pacific Daylight Time.
