Join Ana Sainz as she teaches you how to celebrate summer with our favorite seafood dish: ceviche! You’ll learn how to select the freshest fish, how to properly chop your fish, and how to “cook” it in acid. We’ll explore different styles found around the ocean as we make ceviche verde de Jurel (yellowtail ceviche with tomatillo, cilantro, chiles, and crackers; ceviche acapulqueño de palmito with hearts of palm, tomato, and plantain chips; tostadas de atun (tuna ceviche tostadas) with soy sauce, chipotle mayo, avocado and fried leeks; and aguachile de callo de hacha (scallop ceviche with lime and chile).
