Whether enjoyed with a fork, chopsticks, or your hands, dumplings from around the world are a comfort food like no other. Marie Rutherford grew up folding dumplings with her sister in their family restaurant — the kids shaping the smaller dumplings, and the adults making palm-sized ones that customers would lift into the air, joyously biting off mouthfuls. In this class, Marie focuses on khinkali; beautifully folded dumplings from Georgia, a country located at the intersection of Eastern Europe and Western Asia. You’ll learn how to make pork khinkali with herbs; traditional potato, cabbage, and cheese dumplings; and a perfect fall dish of khinkali stuffed with mushrooms, winter squash, and buckwheat. You’ll enjoy your dumplings with ajapsandali (Georgian-style ratatouille), as well as a browned butter yogurt sauce and a fresh herb salad. So let’s joyously lift our dumplings in the air and say “Gemrielia!”

If we get any takers, we can then issue you a credit.
