Field Trip: Wood-Fired Cooking on San Juan Island

This spring we’re thrilled to team up with Saltwater Farm for a magical multi-day retreat focused on wood-fired cooking! Located on 162 acres of woodland on San Juan Island, Saltwater Farm is a sustainable venue that includes hens, rescue goats, vegetable, wine, and flower gardens, and a wood-fired oven. In this culinary workshop you’ll spend your days learning how to cook in a wood-fired oven, foraging in the woods, stretching mozzarella, gathering eggs, butchering salmon, making jam, learning about infusions for cocktails, and harvesting garden vegetables, herbs, and flowers. Out of your adventures you’ll create meals that will include wood-fired pizza; spatchcock chicken; panzanella with fresh made mozzarella; roasted potatoes, fennel, and celery with a roasted garlic and sausage dressing; lentils with herbs, and cedar-smoked almonds; chili-glazed grilled salmon collars on toast; red chermoula-marinated salmon with chickpeas, chard; preserved lemon, and cilantro; wood-fired wedge salad with anchovy dressing and bread crumbs; and more!

This 4-day camp led by Neil Duncanson, Renée Beaudoin, and Marie Rutherford will take place April 6–9. This Field Trip is geared for adults, and we ask that all guests be at least 21 years of age.

Lodging is included, and pricing is based on which lodging you select. Please register by paying a $300 deposit. We will then email you to confirm your lodging choice, number of guests, and invoice for the balance. The lodging options are:

Cabin nestled in the woods (booked)

This cozy cabin has a king bed, a loft with a queen bed, a living room with a small kitchenette, and a private bathroom.

The total field trip cost for one of these five cabins is $1,800 per guest, based on 2 guests.

If you would like to have a third guest, the cost is $1,500 per guest.


Straitsview Tiny House (booked)

This cozy house has two lofts, one with a king bed and another with a full bed, a living room with a small kitchenette, and a private bathroom.

The total field trip cost for this house is $1,700 per guest, based on 2 guests.

If you would like to have a third guest, the cost is $1,400 per guest.


Sunrise Suite (booked)

This one-bedroom suite has a king bed, a small living room with a kitchen, and views of the Olympic Mountains. It is located upstairs at the Inn, and guests are welcome to gather downstairs, where there is a spacious living room with a fireplace.

The total field trip cost for this suite is $1,700 per guest, based on 2 guests.


Guestroom (booked)

This guestrooms are located upstairs at the Inn and have king beds and a shared bathroom. Guests are welcome to gather downstairs, where there is a full kitchen and spacious living room with a fireplace.

The total retreat cost for one of these two guestrooms is $1,400.

If you would like to have a second guest, the cost is $1,100 per guest.


Barn Suite (booked)

This 2-bedroom suite has a living room with a small kitchenette, and a shared bathroom.

Private room with a king bed: The total field trip cost for this room is $1,200 per guest, based on 2 guests.

Private room with a double bed: The total field trip cost for this room is $1,400 per guest, based on 1 guest.

*If a larger group is interested in renting the entire barn suite, it has a loft and can fit a total of 6 guests for a rate of $1,100 per guest.

Cancellation Policy

While our event purchases are nonrefundable, we are generally happy to give a credit for a future event when we can fill your spot. If you need to cancel, we will reach out to the waitlist. If we get any takers, we can then issue you a credit. The chances of finding a replacement are higher with as much advance notice as possible, so please let us know as soon as possible if you need to cancel.
